Before landing in Springfield, TN, California native Kassandra Espinoza began her journey in the hospitality industry as a teenager, fueled from a young age by her passion to foster happiness through food.
Working in Nashville’s vibrant culinary scene for over four years, Kassandra began her Music City hospitality career at O-Ku Nashville as a Line Cook and Sushi Roller in 2020, before joining the team at 5th & Taylor as Lead Line Cook in 2022. Kassandra credits her extensive skillset, including creativity and strong time management, to her time spent working alongside various mentors throughout her culinary career.
In early 2024, Kassandra joined the Noko team as Sous Chef where she works alongside Executive Chef Dung “Junior” Vo to lead the kitchen team and spearhead menu ideation. In November of 2024, Kassandra was promoted to Chef de Cuisine. At Noko, Kassandra approaches her role with profound care and dedication, putting a strong emphasis on the emotional connection that comes with sharing new ingredients while encouraging her team and guests to venture beyond their comfort zones.
Beyond the kitchen, Kassandra enjoys gardening, kayaking, and traveling to new destinations.
